Citric acid (CA), also known as lemon acid, is an important weak organic acid. It appears as colorless crystals, is odorless, readily soluble in water, and its aqueous solutions exhibit acidity. In biochemistry, it serves as an intermediate in the citric acid cycle (tricarboxylic acid cycle), which occurs in the metabolism of all aerobic organisms. Citric acid is widely used as an acidity regulator (GB 2760–2014), a flavoring agent, and a chelating agent.
